Located in the historic Rondout district of Kingston, NY, Armadillo’s Chef Salvador and crew prepare everything from scratch, right down to the crisp chips and original salsas. We use only the best produce, fish and meats.
Our shrimp stuffed Jalapenos are made on premise with jumbo shrimp and cooked to order. Grilled tuna is sashimi quality. Our babyback ribs are smoked over hickory in our backyard. We never skimp on quality or quantity. We use only top quality outside skirt steak cut for all our dishes from Fajitas to Burritos…we do not skimp on quality (and we never skimp on quantity).
Armadillo is a small, family owned operation. Salvador & Guadalupe Castillo and their children are warm, welcoming and hardworking. They have their “Aunt” Merle helping in the position of official Armadillo “hugger”.
